Definitely that there is no exact definition of evil (or good) is much of the problem here. I am removing the "problem of evil" from the box that theologians and anti-theologians have placed it in and am turning the question around. The PoE argument tries to place the onus of action on God and I question that. Further, which is really my thesis, I place the onus of action against evil on us. Perhaps evil is entirely human-defined, in which case it is entirely up to humans to resolve it. My suggestion is instead of arguing over concepts of God(s), let's work to resolve our problems, which are mostly of our own creation.
