You raise a very important part of being human. You are correct that we do seek constants because we do find comfort in them. When we can count on things being certain ways, it helps us to manage our being in the world. Some of that is, as you say, a Western way of thinking that has become habitual, but we see the desire for constancy in all societies. Sometimes we use reason to find that constancy and other times emotion or stubbornness. Sometimes we create a false sense of certainty. I'm completely with you on sensing relationships and patterns and using that to move toward new possibilities. Not sure this will make sense, but I think the constants often lie within changes and thinking and feeling with awareness allows us to find those relationships that are constant patterns within change.
